Our Warming Homemade Granola

There’s something completely deliciously intoxicating about the smell of homemade granola baking in the oven. This season, as the weather cools and an urge to settle in at home takes hold, this delicious recipe makes the perfect addition to your pantry. Healthy, hearty, and with flavourful warming spices taking centre stage, it is the equivalent of a warm hug on a chilly morning.
 
Easy to make and tailor to what you have at home already, this granola is crisp, flavourful, and addictive! Have fun mixing up the nuts and seeds.
 

Ingredients:

2,5 cups oats
4 tbsp coconut oil (melted) 
3 tbsp chia seeds 
3-4 tbsp sunflower seeds 
3 tbsp desiccated coconut (optional) 
5 tbsp of mixed nuts of choice – cashews, peanuts and hazelnuts work well! 
5 tbsp raisins (add after baking) 
1 tsp cinnamon 
1/2 tsp ginger 
1/2 tsp cardamom 
1/4 tsp nutmeg 
1 tsp vanilla extract 
8 tbsp maple syrup or honey (depending on how sweet you like it)
Yoghurt and fruit of choice to serve

   

Method:

Mix all of the ingredients thoroughly, adding the melted coconut oil, maple syrup/ honey, nuts & seeds and spices in a large bowl. Pour the mixture onto a baking tray lined with parchment paper and bake it for about 20-30 minutes at 140°C, stirring 3 times while in the oven. At the end, add in the raisins (if you do it earlier, they will burn) or any other dried fruit you like. Store in a glass jar and enjoy with yoghurt and fresh fruit – delicious & easy!
